Recipes with a mother's flair

Before plunging headlong into these recipes, pause a minute and thank your mother for cooking for you all those years- because I'm thanking my mom for sharing them with me.
Here are some of the best (simple) things my mom made when I was a kid.

Cow patty cookies
1 stick margarine
½ c. milk
1 tsp. vanilla
2 c. sugar
2 tbsp. cocoa
½ c. peanut butter
2 c. oatmeal

Boil together margarine, milk, vanilla and sugar for 2 ½ minutes (the time here is important). Remove and add cocoa, peanut butter and oatmeal. Mix and drop by teaspoonfuls onto wax paper.

Broccoli casserole
2 packages of frozen broccoli
1 small jar of Cheez Whiz (or half a block of Velveeta cheese)
½ c. mayonnaise
1 can of cream of chicken soup
1 small package of cornbread stuffing
1 stick of melted margarine

Place broccoli in 13' x 9' pan. Mix cheese, mayonnaise and soup and pour over the broccoli. Mix stuffing with melted margarine and place on top. Bake at 350 for 30 minutes.

Pecan pie
2 c. brown sugar
3 eggs
¼ stick butter
1 tsp. vanilla
½ cup of broken pecans
¼ c. milk

Mix all ingredients together and pour into unbaked pie shell. Bake at 350 until shell is light brown and the pie is set.
